Title: i wonder

i was wondering if it was possibe to put a new under the varient type of ship so for instance u could have the Excelsior Class ship and as a varient u could excelsior2+  class ship. Any ideas?

Yes a new what indeed ?  As far as varients go, ask Fury of a Seraph, he's the resident Excelsior varient king.
