I have a good friend, who has a cancer, and unfortuanatly, Meat tears up his colon. I went through my wifes Old School Italian recipes, and found only one recipe for Eggplant parmesian, but I would like to give him some more options.
If anyone has some good Veggy recipes , I'd very much appreciate it, in order to pass them on.

Hows he with dairy? I've got a good one with spinach and two types of cheese.

Stephen, you could just do a quick internet search. Google turned up a couple like this: http://allrecipes.com/Recipes/Everyday-Cooking/Vegetarian/Main.aspx
Of course I have no idea on if they have GOOD recipes or not.

Amy, I'm not sure, He didn't mention anything about Dairy when I last talked to him, so I'm going to say It's ok.
S'raek, thanks for the link But one of the reasons, I asked, was because people might have actually tried a recipe Have a home made dish etc.

Karnipolsky (a meatless Veg/Dairy casserole)
Preheat oven to 350F
6 eggs beaten
6 Table Spoons of flour
8 oz. Shredded Cheddar Cheese (the good stuff! I like Extra Sharp myself)
2 - 10 oz. boxes of frozen chopped spinach, well drained
2 small or 1 large carton of small curd cottage cheese
3 Table Spoons of mostly melted butter
Grease and flour a 9 in x 13 in glass dish
Mix the ingredients together and pour into prepaired oven dish. Place the pan in the oven for about 40 - 55 min. To check to see if it is done you look for a nice golden brown top and the test knife comes out pretty much clean when you pierce the middle.
Hope he likes it and you gotta try it too! Also it was a recipe that was given to my mom from a friend who later died of MS. We ask that if you can when you make this dish please donate to the fight against MS.
