Found by way of a post at the Trek BBS

It's from the record file on the Defiant that the Mirror Archer looks at and starts to get jealous.  But, just to summarize his career:

Rank at retirement: Admiral, Chief of Staff, Starfleet Command
Former Assignments:
Commanding officer, Enterprise NX-01 2150 - 2160 (Fits in with what the finale will show)
Ambassador to Andoria, 2169 - 2175
Federation Councilman 2175 - 2183
President, UFP, 2184 - 2192

President?  Now isn't that interesting.  Other little tidbits gleaned from the record include that the names of the two planets that bear his name are Archer IV, mentioned in the TNG episode "Yesterday's Enterprise" and first discovered in the ENT episode "Strange New World," and Archer's Planet in the Gamma Trianguli Sector, where the planet from the TOS episode "The Apple" is located.  The man who calls Archer the "greatest explorer of the 22nd Century" is none other than Federation historian John Gill, the same man who tried to impose the Nazi style of government on the planet Ekos in "Patterns of Force" (What is it with Archer and Nazis?).  In 2164, Archer was made an honorary member of the Andorian Guard by General Thy'lek Shran.

There's also a screencap of Hoshi's record, but it is a bit harder to read and doesn't reveal much of anything that we didn't know about her from the series before or what the Mirror Hoshi read from it, save that her birthday is July 9, 2129 and she was born in Kyoto.

After some gentle prodding, writer Mike Sussman revealed all the text he used for the on-screen bios of Hoshi and Archer in a post at the Trek BBS.  However, the final fates of the characters weren't shown on the monitor screen, and he revealed them for the first time:

Quote
Archer died peacefully in his home in upstate New York in the year 2245, exactly one day after attending the christening ceremony of the first Federation Starship Enterprise, NCC-1701.

Quote
Tragically, Hoshi and her family were among the four thousand people who died on Tarsus Four in 2246 when a food shortage caused by an exotic fungus threatened the colony’s population. Governor Kodos ordered the deaths of Sato and the others in order to save the rest of the colony. She was buried in Kyoto with her husband, Takashi Kimura.

I suppose it's possible that Hoshi might have known a young James T. Kirk, who was on Tarsus Four when Kodos the Executioner started his rampage.
