Well, I'll try to find some that haven't been said, and some aren't exactly one liners:

Worf: I protest. I am not a merry man!

Spock responds to T'Pua's (sp?) "Live long and prosper", after thinking he has killed Kirk in the battle over T'Pol.
"I shall do neither, as I have killed my friend and my captian."

Last linefrom the TNG season ending cliffhanger where Locutus (Picard) is closing on the Enterprise in the Borg cube. Ricker says to Shelby and the rest of the Bridge crew "Fire!"
